The Super Healthy Lunch for $2

We all know you can hit up the fast food drive-thru to score a meal under $2 – but can a healthy lunch be made for that price? We took the challenge and created this super-healthy, paleo-friendly, wheat-free, sugar-free, dairy-free lunch for about $2 a serving.

What you’ll need:
Cupcake holders
2 bags of frozen spinach (let defrost)
1/2 medium chopped onion
2 pounds of ground turkey meat
2 cloves of garlic
Trader Joe’s Italian Seasoning Mix (or your own mix)
3 large eggs (or egg whites)

Preheat your oven to 375.
Squeeze all of the water out of your spinach. If it hasn’t defrosted fully you can microwave for about 3 minutes. To squeeze the water put the spinach in a colander and then place a small bowl or ramekin on top to squeeze the water through the colander. If all else fails – wash your hands really, really well, and then squeeze the water out of the spinach with your hands.
On the stove top, saute the chopped onion for about five minutes, add in the meat, spices and garlic and cook until it’s browned. Be sure to break up the ground meat in little chunks so it really gets all the flavor. Once cooked mix with the spinach and set aside until cool. Then add the eggs (see you don’t want to add the eggs to the warm mixture or else they’ll scramble!) and pack little cupcake holders with your mix. Pack the holders tight. Cook for about 40 minutes.
Before eating add a little all-natural BBQ to the top of the muffin and eat warm.

The recipe makes about 16 cupcakes and you’ll need about three for a lunch or you can have them as an afternoon snack. Total cost for ingredients was about $8!
